Valentine’s Day - A day of joy and romance. Food is such an important part of this romantic holiday; be it a long leisurely meal or a gift hamper oozing with yummy sweet treats.

Somehow Valentine’s day just wouldn’t be the same without a luscious dessert. My personal choice would be to sit somewhere wildly romantic with a bottle of champagne and drop little bits of decadent truffles into my partners mouth as I speak sweet nothings. Except I am rather terrified of waking up from my romantic dream into a nightmare where the doctors hands me out a cholesterol filled report card for my efforts!

So how do you give your partner a sweet treat without breaking the bank with calories?

This dessert actually came about when we were playing around in the kitchen with my little daughter and her best friend one boring afternoon where we couldn’t think of what to do. It’s so simple that even a kid can put it together but it looks stunning with the varied colours!!

Not sure what to call it yet so lets call it a Valentine’s Surprise.

  • Take a nice tall glass that has a stem – makes the final product look very much like a French ‘parfait’
  • Half a cup of homemade yoghurt (do cheat a little and make this with whole milk so its nice and creamy).
  • 2 spoons of honey
  • Handful of kellogs cornflakes
  • I pure Magic biscuit - crushed
  • 5-6 strawberries – finely sliced

Mix 1 spoon of the honey into the yoghurt and the other spoon into the cornflakes. Place two tablespoons of the yogurt honey mix at the bottom of the glass, then add the cornflakes mixture, add the crushed pure magic biscuity, add the balance yogurt honey mix and top with the slices strawberries. Chill for at least an hour before serving.

Yogurt is highly nutritious; it contains protein and vitamins and is a rich source of calcium. The enzymes help in good digestion. The cornflakes and strawberries are low in calories and have fibre. The single pure magic icecream adds the little chocolate zing.

We particularly enjoyed the blend of smooth youghurt with the crunchy cornflakes. And the combination of white yoghurt, brown chocolate mix and red strawberries rather pleases the eye as well as the palate. The colours so fit the Valentine theme and it looks rather an enchanting treat. So go ahead and enjoy feeding it to your lover – he’s sure to be happy and healthy.
